Serves 2, Prep time: 10 minutes
- 1 large cucumber, chopped into small pieces
- ½ medium sweet onion, chopped into small pieces
- ½ large sweet pepper (yellow or red), chopped into small pieces
- 6 button mushrooms, chopped
- 1 medium avocado, chopped
- 12 – 15 grape or cherry tomatoes, halved
- 4 tbl balsamic vinegar
- 2 tbl red pepper rice vinegar (no sodium, no sugar added)
Wash and prepare all vegetables, chopping each vegetable into a medium bowl. Add vinegars and toss gently. Chill.
Serve and enjoy.
