SUPER EASY CUCUMBER, ONION, TOMATO, PEPPER, MUSHROOM & AVOCADO SALAD

Serves 2, Prep time: 10 minutes

  • 1 large cucumber, chopped into small pieces
  • ½ medium sweet onion, chopped into small pieces
  • ½ large sweet pepper (yellow or red), chopped into small pieces
  • 6 button mushrooms, chopped
  • 1 medium avocado, chopped
  • 12 – 15 grape or cherry tomatoes, halved
  • 4 tbl balsamic vinegar
  • 2 tbl red pepper rice vinegar (no sodium, no sugar added)

Wash and prepare all vegetables, chopping each vegetable into a medium bowl. Add vinegars and toss gently. Chill.

Serve and enjoy.
