Nothing tastes better to me on chilly fall or winter evenings than a baked apple with cinnamon. It makes the house warm and cozy and smells wonderful too! It’s a dessert that’s really healthy for you!
Prep time: 8 – 10 min, Microwave Baking Time, 4 – 6 min; Oven Baking Time: 15 – 18 min
- 2 medium to large baking/cooking apples, cored
- 2 tbl pomegranate juice
- 2 tsp cinnamon
- 4 tbl dried cranberries (or golden raisins)
Wash and core apples and peel a bit of skin away from around the top. Place into a microwave safe dish (that you can cover with a lid). Add 1 tbl of water to the bottom of the dish. Pour 1 tbl of pomegranate juice into each core. Add 1/2 to 1 tsp cinnamon to each hollowed out core area and stuff with dried cranberries
Microwave at HIGH for 2 – 6 min (depending on size of apple.) Let stand for 2 min before serving.
Heat oven to 400 degrees. Prepare apples the same. Place them into a cooking dish that is oven safe. Bake 15 to 18 minutes depending on the size of your apple.
