- 1 cup loosely packed pitted Medjool dates
- 1 cup rolled oat
- ⅛ teaspoon cinnamon
- ½ teaspoon vanilla
- ½ cup almond butter
- 2 tablespoons chia seeds
- ¼ cup Enjoy Life Semi-Sweet Mini Chips mini chocolate chips (dairy-free, nut-free and soy-free)
- ½ cup organic coconut
Put all ingredients — except the coconut and mini chips — into your food processor and thoroughly mix. If you find the mixture is a bit dry, add a splash of water. Remove blade and stir in mini chips. Next roll into balls that are ¾ to of 1 inch in diameter. They don’t need to be any bigger. Store in an airtight container and keep refrigerated for up to one week.
By all means, have fun with your food. These are little works of art- get creative! If you’re sharing them at a party, dress them up too. Add a bit of color with some bits of cut up dried mangoes, roll them in some chopped nuts, throw in some sunflower seeds etc.
