Welcome to my Healthy Kitchen,

My name is Karen and I’ve been eating a plant-based diet since 2012. I’ve removed refined sugar and most processed foods from my diet. Around 2010, I went vegetarian, but when I eliminated all animal based products from my diet, I dropped 20 more pounds of a 50 pound weight loss goal, and since that time, I’ve maintained my weight.

When I went vegetarian, I discovered that I love cooking dishes that are easy to prepare, don’t take a lot of expensive ingredients, and are absolutely healthy for you. For me, it’s all about tasting good but not about spending too much money, or too much time in the kitchen slaving over a hot stove. My goal when I eat is to keep the sugar, salt, fat and processed ingredients to a bare minimum. Many of my recipes are simple one pan dishes, simple stir fry’s and I love, love, love to make soups. So I will be sharing lots of those yummy recipes with you.

The recipes I’ll be posting will include tasty breakfast choices, lunch or dinner ideas, as well as tasty but healthy desserts.

I can’t tell you how excited I am to share my upcoming recipes. I hope you find you enjoy them as much as I do. Join me as I create delicious dishes that are easy to cook and are good for you.
