If you’re looking for a fun and easy treat this Halloween you can’t beat the taste of these bite-size, super simple, coconut chia balls that are packed with deliciousness. I love the no-bake piece. And the best part? No butter, no sugar, no honey and packed with nutrients. Chia seeds after all are a superfood treasure.
They’ll be perfect for a party. You can be simple and leave them plain on the outside, you can roll them in coconut, you can roll them in chopped nuts or you can add a little color with some cut up dried fruit. Get as creative as you like.
You can roll them into a ball, you can roll them into little logs, you can press the mixture into silicone muffin shapes and make stars, hearts or… the sky’s the limit! Don’t be shy. After I tried adding mini chocolate chips and putting the coconut into the mixture, I really liked how it tasted – it added a little kick and a bit of a crunch. All you need is the basic recipe. So, here you go. Here’s my latest version.
Coconut Chocolate Chip Chia Treats
Makes 36 balls. Prep time: 10 minutes Make time: 10 minutes
- 1 cup loosely packed pitted Medjool dates
- 1 cup rolled oat
- ⅛ teaspoon cinnamon
- ½ teaspoon vanilla
- ½ cup almond butter
- 2 tablespoons chia seeds
- ¼ cup Enjoy Life Semi-Sweet Mini Chips mini chocolate chips (dairy-free, nut-free and soy-free)
- ½ cup organic coconut
Put all ingredients — except the coconut and mini chips — into your food processor and thoroughly mix. If you find the mixture is a bit dry, add a splash of water. Remove blade and stir in mini chips. Next roll into balls that are ¾ to of 1 inch in diameter. They don’t need to be any bigger. Store in an airtight container and keep refrigerated for up to one week.
By all means, have fun with your food. These are little works of art- get creative! If you’re sharing them at a party, dress them up too. Add a bit of color with some bits of cut up dried mangoes, roll them in some chopped nuts, throw in some sunflower seeds etc. Make them into spiders or put some googly eyes on them!
