Blueberry-Strawberry Compote on Toast


Well, I went to bed with no electricity and it was pretty cold. I was up at 6, still no electricity, so I went back to bed and noticed it had come back on about 6:45 or so. So, this morning I just wanted something simple, but tasty. So I made a quick and simple blueberry – strawberry compote. It’s made the house smell wonderful. And it’s perfect on my Dave’s Killer Thin toast with organic peanut butter with slices of Asian Pear and freshly ground morning coffee – YUM.

TOTAL TIME: 25 min    PREP TIME: 5 min     COOK TIME: 20 min     YIELD: At least 3 cups


  • 2 cups frozen blueberries
  • 2 cups frozen strawberries
  • 3 tablespoons water
  • 1 tablespoon lemon juice


Combine the 1 cup of the blueberries, and 1 cup of the strawberries, water and lemon juice in a small saucepan. Cook over a medium heat for about 12 minutes. Add the rest of the blueberries and cook for 8 minutes more, stirring frequently. Serve warm. This is great on oatmeal, toast,muffins, ice cream, yogurt…ideas are endless!

YIKES, the electricity has gone off and on again now, three times…better get this posted. LOL, I posted so quickly, I didn’t have a chance to edit! So, I’ve fixed some of my typing miscues … 🙂
