A healthy, great tasting, veggie burger is hard to find, especially one that is dairy and preservative free so I usually make them myself. But like most of us, who lead full, busy lives, I don’t always have the time so, I keep my eyes open when I pass by the frozen food section just to check on the options. Sadly, I don’t have a lot of choices for grocery shopping in my small, rural community so I had found zero choices that I would recommend until yesterday when I stopped at the Grocery Outlet in Cottage Grove.
Back near the organic food section, in the freezer section that displays several healthy frozen food options, I found the perfect tasting veggie burger! Amy’s All American Veggie Burger, a firm, hearty, burger that I feel will be perfect for grilling or barbecuing when the weather permits. It’s made from fresh organic grains, vegetables and protein rich Non GMO soy.
I fixed this tasty dinner in a snap. Instead of a burger bun (I’ve yet to find a healthy one on the store shelf) I used 2 slices of Good Seed Thin-Sliced Dave’s Killer Bread and it was perfect! Perfect taste. Perfect size for my burger!
It’s the same sweet flavor and nutritional benefits of Good Seed but only 70 calories per slice vs 110. It’s perfect for those of us who aren’t looking to add a lot extra carbs or calories to a meal.
On one slice instead of mayo, I used a blend of red pepper hummus and artichoke tapenade, on the other slice I used a stone ground mustard. Then I topped it with a dollop of my Kick-Ass Ketchup, a thin slice of sweet onion, tomatoes, lettuce and oh 3 slices of avocado. And Oh Boy! did it taste good! It was absolutely filling along with a small cup of vegetable curry soup, I couldn’t have been a happier girl! Along with some homemade sweet potato fries this was a tasty meal last night. Here’s a lighter burger version without the avocado and the fries. And even without a bun … (forgot to take a pic) you will be pleased. They are hearty and filling.
