Wow, the weather here in Cottage Grove is nothing short of just amazing. I have never experienced this much snow here or this type of snow. Even poor Zoey can’t really find a place to go outside and “do her business.” Because the snow is so dry and fluffy, she started to trek out across the front yard and was completely lost in the fluffy snow. I of course had her on her lead and was able to bring her directly back…thank goodness!!
I did venture out to take the snow off of my bushes and front hedge. A year ago, in less snow than this, I lost the end hedge bush and didn’t want to chance that happening again, even though the snow is not as wet as last year.
The back yard is simply beautiful and serene and sometimes when I look outside I see snow flurries when the wind lightly blows the snow from the branches of the surrounding trees.
The hard part now is that here in Cottage Grove, there is the lack of snow plow equipment to take care of roads. They do plow the interstate, but not much in town, since storms like this come around so seldom. In fact, we again, sadly have to cancel our show tonight of the Cottage Theater production of It’s a Wonderful Life. Safety first, since the road conditions at about 10 pm, when the show lets out, will be very icy.
Last night when I went outside for a while just to enjoy the calm, serene quite sound that accompanies a snow fall such as this, a young man walked by down the street. We visited for a few minutes and he shared that he had been born here and in his 37 years, he had never seen or experienced such weather. So, yes, this snow is truly is amazing.
Thus, today at a sweltering 25 degrees and a night-time forecast of 9 degrees! I’d say it’s another cold day for some hot soup.
I love pureed soups because they make a nicely flavored appetizer soup or light soup with lunch. They are also very versatile because you can have them simply pureed; or if you like, use the puree as the base for a thicker, chunky soup to which you can add extra vegetables in the last few steps and then let everything simmer for about 15 to 20 minutes to absorb, blend, and enhance the flavors.
One of my favorite pureed soups, because it’s just so homey – has always been a thick potato soup. When I began eating a plant-based diet, I was very happy to realize that I could continue making a rich, full-flavored, soup without the use of a heavy cream.
So, for several years I have been making my potato soups with the addition of cauliflower and just a small amount of non-dairy milk. (If I don’t use the plant-based milk, it will still be nice and creamy).
Cauliflower not only enhances the flavor – and makes a much bigger, creamier batch of soup – ! – but I’ve learned that by adding cauliflower, a member of the cruciferous family, it adds some additional wonderful health benefits. Along with extra fiber, cauliflower is packed with vitamins and minerals that strengthens the immune system and protects against the development of cancer.
