Isn’t the snow beautiful in Cottage Grove, Oregon today?! Here are a couple of shots . . . one from my front door and one from my kitchen door into the back yard . . . . We haven’t had this much snow here in a few years. It’s really pretty from my toasty Healthy Kitchen!!
And it’s a perfect background setting for my Christmas tree which my daughter Kirsten and her husband Eigo helped me start putting up last weekend. I am truly in the spirit at Karen’s Healthy Kitchen!
I am home today. Happy to be safe and warm. I know many are home today … with schools throughout Oregon having a snow day. I work for South Lane School District here in Cottage Grove, and we are closed due to the snow.
Thus, I am getting to spend some quality time today in my Healthy Kitchen with my little pal,
Zoey, is my son’s little Jack Russell Terrier. She turned 13 this in October! and Sean turned 23 today!! I was thrilled to be able to call him as he is traveling by train through India. It was truly special for me!! He is having the most phenomenal experience participating in his internship with Projects Abroad; and from what he shared, he had experienced the most heart-warming birthday he has ever spent … of course he missed being with family, but while having dinner in a little restaurant at the end of a busy day of sight-seeing, a group of “complete strangers” heard that it was his birthday and sang Happy Birthday to him as he was presented with cake and candles. I am so very proud of him as he finds and brings happiness and joy wherever he happens to venture.
But I digress.
This morning I started off the day with one of my simple soy lattes with a dash of cinnamon and some wonderful muesli cereal with warm strawberries and blueberries.
Then, of course I got right to the task of putting together an absolutely delicious and simple rice, bean and vegetable soup.
It didn’t take me more than 10 minutes to put together and about 25 to 30 minutes to simmer. I was really looking forward for a thick, hearty creamy soup today, so if you like that type of soup as well, this one is spot-on. (You will find the recipe in my recipe section.)
Another reason I like this soup is because I used everything from either the fridge or the freezer — all the ingredients I used were previously prepared and ready to go from previous cooking where I had made extra portions and then popped them into the freezer. Can’t beat that, because on a day like this soup really hits the spot.
