Keep meals simple and don’t stress

First off all, thank you to all those who have served their country. Thank you to my father and his two brothers who served in WWII — to his youngest brother, who gave his life somewhere over Italy. Thank you to my two brothers and my sister who served in Vietnam, and came home. Thank you to my children’s father who served in the Air Force. You are my heroes!

As I was home today working on getting many things accomplished, I was happy to not spend a lot of time fussing in the kitchen. It was great to just be simple.

For breakfast, I had my favorite: oatmeal with berries.

For lunch, I pulled out one of my Healthy Veggie Pizzas from Saturday and simply added 3/4 cup of pinto beans with chunky salsa. Warmed it all up in the microwave. Yum!

Well, actually as you can see, I only had half of one my pizzas! Ha! But that’s ok. It was plenty when I added about a cup of some Cheesy soup I had whipped up with my Vita Mix on Saturday. It totally hit the spot and only took me about 10 minutes to prepare.

Now that’s sweet. Now off to a meeting!
