For quite some time friends have told me that they are inspired by the changes I have made in my life. A few have shared that I am their inspiration; and that is quite humbling. Many times I have been asked these three questions: “How did you do it?” “What do you eat?” and probably I’m asked the most often “With all the information out there, how do you put it all together?”
Because it really does come down to what we put on our fork or spoon, I realize that I have something to offer people. I can help others by sharing what has worked for me. Kind of like working up a road map to an adventure … “I’m here, Karen; and I want to get there, so what’s the best route?” So, this website is for all of you who might find some benefit in the information I’ve been gathering. It’s just getting started. And it will be so much fun having you join me in Karen’s Veggie Kitchen, as it continues to develop.
I can’t begin to tell you how incredible, and scary, it is for me to create this website/blog for you to enjoy. It’s an adventure that will allow me to put many of my passions into play. Of course many of you know that I love being on the stage. But, I also love writing, learning new things, and wanting to share those things with others. That’s probably why I studied for and became a teacher. In the last few years, I have been having a lot of fun getting back into the kitchen cooking – creating some pretty tasty plant-strong dishes. Yes, I’ve rediscovered that I LOVE to cook, and I have been reading and gathering as much information as I can get my hands on to make sure that what I am eating not only tastes great, but contains all the right nutrients to be healthy.
The recipes I create in Karen’s Veggie Kitchen are never expensive, never call for a lot of fancy ingredients, and never take me a lot of time. I like to cook, but I want to enjoy it in a relatively short amount of time. I like to sit down with my family and friends and enjoy the food, but most of all, enjoy their company. So, the recipes I prepare and share with you on my blog will be delicious but EASY. I use simple, whole foods with lots of color, crunch and snap that are good for you. Nothing is more fun for me now than to walk down the street to my little Farmer’s Market, pick out something that looks fresh and tasty and in just a matter of minutes – on a cold rainy night – have it simmering on the stove for dinner. And we get our fair share of rainy nights here in Oregon!

It can be scary, crazy and confusing to switch from the comfort of your current standard American diet (S.A.D.) to food choices that are plant-based.
I moved gradually into plant-based eating. It has been a journey. First, I focused on and became comfortable with making healthy, low-fat choices. Then I explored and became a vegetarian; but not long after, I found myself wanting to totally embrace non-animal based food choices. But when I did, it took me some due diligence to read up on and about how to make sure I was eating all the right nutrients. I hope my information here helps you with your journey.
